Le Charbonnier has a white slightly ashy rind and a chalky white paste that melts in the mouth. It features milk lactic aromas and caprine flavours of medium intensity. Delicately salted and tangy. With its rind covered with vegetable ash, this cheese is named for the charcoal maker or seller: “Le Charbonnier.”
