Ubriaco al Prosecco DOC

A firm, “drunken” cheese made by Latteria di Moro in Veneto, Italy. The cheese is submerged for two months in Prosecco wine, grapes and must, and then aged for a further six months. The result is a cheese that has absorbed the flavours of the wine, and is balanced by smooth, savoury flavours.

Ubriaco Raboso

Ubriaco Raboso Italy

Ubriaco di Raboso is an Italian semi-hard cheese that is washed in Raboso wine and marc. The wine gives this full bodied cheese a beautiful ruby red rind and pleasantly fruity wine flavour.

Vacherin Mont d'Or

Vacherin Mont d'Or

Vacherin Mont d'Or hails from Switzerland on the border of France near the mountain D'Or. Traditionally made with the winter milk of the same cows that produce Gruyere in the summer, this cheese is only available from October until April, making it all the more precious. The cheese must be made from cows munching on straw and fodder; once outside to graze at pasture, their milk is used for larger alpine cheeses. Swiss regulations also dictate the cheese must be produced at elevations of 2,297 feet or higher.

Vezzena di Lavarone

Vezzena di Lavarone di Malga
Vezzena cheese has been produced on the plateaus of Folgaria, Lavarone and Luserna since very ancient times. The partially skimmed raw milk is collected from Brown, Red Pezzata and Black Pezzata cows.
 
This cheese has a firm crystaline texture like parmesan, and a salty full flavour.

Wildwood

Wildwood Raw Milk

Wildwood has an impressive zesty flavour, but also a very rustic and appealing appearance. The aromatic rind gives the cheese a contrasting texture to the interior and typical aromas associated with washed rind cheeses. Wildwood is rich and creamy on the palate with a nice balance of salt. Wildwood is named after the Wildwood Dam in St. Marys.

Wildwood tastes excellent in sandwiches or just on a cheese platter with fruits, dried meat and bread. It can also be melted very well and used in grilled cheese sandwiches. This cheese is unique in its appearance and taste.
