Appenzeller Surchoix

Appenzeller Surchoix Switzerland

Appenzeller cheese is a hard cow's-milk cheese produced in the Appenzell region of northeast Switzerland. A herbal brine, sometimes incorporating wine or cider, is applied to the wheels of cheese while they cure, which flavours and preserves the cheese while promoting the formation of a rind.

Appenzeller has a documented history of at least 700 years. Today, about 75 dairies produce it, each with a different recipe for their brine wash. Most of the recipes are trade secrets.

Asiago is a cow's milk cheese, produced only on the Asiago plateau in the Veneto foothills in Italy. The cheese-making tradition in the provinces of  Vicenza and Trento dates back to more than thousand years. Traditionally, it was made from sheep's milk but today it is produced from unpasteurized cow's milk.

Every spring the Beemster cows rush through the barn doors and excitedly graze on the fresh spring pastures. The cows run and jump with excitement after being released to these untouched pastures. It is only the first milkings from these fresh pastures that are used to make the coveted Beemster Graskaas.This rare cheese, known for being the creamiest of the year, is aged for one month.

The flavours are uniquely deep yet the texture remains very rich and creamy.

Beemster Vlaskaas

Historically, Vlaskaas was made only once a year to celebrate the Flax Harvest. In 2004 the Vlaskaas recipe was discovered and recreated by Beemster. Since then Vlaskaas has won golden medals around the world and is now made year-round.

This farmstead cheese lives up to her name: Farmers’ Pride. In Holland ‘boer’ means Farmer and ‘trots’ stands for Pride.

Boer 'n Trots with black truffles, garlic, sun-dried tomatoes, oregano and black olives, all velvety smoothed out with honey. Gouda from Landgoed Kaamps, in the province of Overijssel, with honey-washed curd and honey crust. Unusual and delicious cheese with a touch of Italy.

Bois de Grandmont

Bois de Grandmont is a bark-wrapped bloomy rind cheese with woodsy, sweet, herbal, and bright flavours. The bark holds the delicate cheese together, provides flavour to the creamy paste, and allows for an ideal presentation as the centerpiece of a cheese plate.

Pair with sparkling wine, apple cider, or a fresh IPA.

Chateau de Bourgogne is made in the Burgundy region of France and is a not too distant cousin to Brillat Savarin. It is delicate, soft and creamy,yeilding a shot of butter and a dash of salt on the tongue before vanishing!

The richness of Chateau Bourgogne is set off and balanced wonderfully by champagne, but it will match well with a red burgundy (local matches are always good), other pinot noirs, or a blended red, like a Bordeaux or meritage.

Brie de Meaux

Brie de Meaux, raw milk, France

Brie de Meaux, named after the town of Meaux, is produced in the region of Brie, located 50 kilometers to the east of Paris. Records referencing Brie de Meaux date back to the 8th century, when the emperor Charlemagne is said to have tasted it. During the French Revolution, Louis XVI is said to have requested a final taste of Brie de Meaux before his arrest.
