At the age of 21, Jason Fuoco already knew that he wanted to create a cheese that would be unique in Quebec. Water buffalo milk, being rare, was the perfect ingredient for this creative challenge. Since 2012, he has been making his cheese at the Fromagiers de la Table Ronde - a cheese factory located 10 km from his farm. The adventure had begun.
