Stracchino, also known as Crescenza, is an Italian cow's-milk cheese. It has no rind and a very soft, creamy texture and a mild and delicate flavour with a slight tanginess.
Serve with a little olive oil and a loaf of crusty Italian bread alongside some cured meats, briny olives, and tomatoes. Very nice topped with honey or fruit preserves. Pairs well with raw or cooked vegetables and fresh fruits. Scoop onto warm polenta, use on pizza, cube in salads, combine with sharp cheddar for super creamy mac and cheese. Stracchino adds creamy tang to any pasta recipe, toss it with pasta and a splash of the cooking water to make a creamy sauce.
