1057 Extra Mature Scottish Cheddar

Named after the date when one of the last of the Celtic Kings – King MacBeth – lost his head upon a cold stone near the Peel of Lumphanan, 1057 is made from rich Scottish milk taken from dairy herds that graze on the banks of the lochs and in the glens of Scotland.

This mature cheddar is full flavoured, savoury, with some pleasant salty crystals throughout.

Coastal Cheddar is aged for up to fifteen months which bestows it with its rich and intense flavour but the culture used also adds a contrasting subtle, sweet, top note.

From time to time, you may encounter a characteristic crunch when you bite into this cheddar – a consequence of the calcium lactate crystals which form naturally as the cheddar ages.

The Extra Old Cheddar is aged for two years using a Scottish recipe and dry stir technique in which the curds are dried and then salted. Named Canada’s Best aged cheddar at the 2009 Canadian Cheese Grand Prix, this is a smooth, full-bodied cheese. Organic milk. Winner of Best Old Cheddar at Canadian Cheese Awards 2014.

Made with the milk from the cows of the PEI cooperative dairy farm.

Coated in red wax.

Perfect in a ham and mustard sandwich. Also gives a rich amber colour melted over chicken or steak. Pair with a new world Merlot.

It has a savoury aroma with delicately complex notes, while its texture is incredibly smooth and irresistibly creamy with the occasional crunchy crystal. Its complex, umami flavours are as deep as the caverns it is aged in, and it finishes with sweet, caramel notes and a savoury tang with a long finish.

Thea is a handcrafted clothbound cheddar is made with sheep milk from local farms around Lindsay, Ontario. It has firm and slightly crumbly texture with some nice crystalization. Thea is a full flavoured aged cheddar with earthy and grassy notes and a rich sweetness on the finish.
