Aged six months or more, Midnight Moon is an ivory-coloured goat cheese with a nutty and brown butter flavour and a long caramel finish. Similar to a Gouda, as Midnight Moon ages, protein crystals form and lend a slight crunch to the otherwise dense and smooth cheese.

Monsieur Émile was introduced in 2009 and is the namesake of the cheesemaker’s great grandfather. It is a medium intensity goat cheese with a yellowish, wrinkled rind. The interior is smooth and dense and goes from chalky to creamy. It features mild caprine aromas and creamy, nutty flavours with a spicy end note.

Paillot de Chèvre

In past times, cheesemakers used to insert a single piece of straw in the centre of the cheese in order to provide support while transporting it within the province. Based on the same tradition, Paillot de Chèvre is a ripened goat cheese shaped in a traditional log with plastic straws rolled along the length of the thin, bloomy, white exterior.

It is white and firm towards the centre but runnier at the edge of the rind. Balanced, flavourful, and slightly tangy, lactic and goaty with subtle hints of hazelnut. The flavours become more pronounced as the cheese ripens.
