Coastal Cheddar is aged for up to fifteen months which bestows it with its rich and intense flavour but the culture used also adds a contrasting subtle, sweet, top note.

From time to time, you may encounter a characteristic crunch when you bite into this cheddar – a consequence of the calcium lactate crystals which form naturally as the cheddar ages.

Cotija is named after the town of Cotija in the Mexican state of Michoacán. A mild salty fresh white cheese simular to feta.

Since Cotija cheese is salty, firm and does not actually melt, it is used for grating on salads, soups, casseroles, tacos, tostadas and chili. In Mexico, it is also widely used to enhance the flavour of many savory dishes by mixing directly into the casserole or recipe.

Cows Creamery 2 Year Cheddar

Curé Hébert

Curé-Hébert Quebec

This semi-soft, washed rind farm cheese is made with raw milk drawn from the Fromagerie l’Autre Versant’s herd of Ayrshire cows. Its orange-brown rind is partially covered by a fluffy white coat. The cheese has a buttery colour, a supple, shiny, melt-in-your mouth interior and a scattering of small holes.
