A hand crafted washed rind cow's milk cheese made with milk from the family farm and delicately aged on cedar wood planks. This cheese has a creamy texture and lightly lactic and buttery flavours. The addition of horseradish gives this cheese a rich savoury and sharp flavour.

Made in Woodstock, Ontario.

Parmigiano Reggiano 24 Months

Parmigiano-Reggiano cheese, is a Protected Designation of Origin (PDO) completely natural product; absolutely without additives. The production is carried out only within a defined area, because it is strictly related to the features of land, feed and cattle breeding that define the quality of the milk. Thanks to the ancient tradition passed down over time by the cheese makers, the production is still hand-made as it was eight centuries ago.

Perlagrigia

Perlagrigia Truffle Italy

Made just outside of Venice, this cow's milk cheese is a young, fresh tasting cheese. Perlagrigia contains flakes of the prized black truffle. After being carefully washed, it is rubbed with extra virgin olive oil infused with natural truffle flavour. This semi-soft cheese is covered in ash to preserve its flavours. The ash layer is made from drying and grinding the following herbs; cloves, cinnamon, nutmeg, coriander, licorice and nutmeg. All of these herbs are grown by local farmers using time honoured methods of cultivation and harvesting.

This is the traditional cheese of Belluno, matured for a minimum of 12 months.
A hard, compact, cooked cheese, Piave Vecchio has an intense flavour that increases as it matures. It has a concentrated sweet, crystalline paste with a full, tropical fruit flavor and slight almond bitterness.

Picobello has a robust flavour with a touch of sweetness and a firm crystalline texture. Sweet notes of caramel, roasted nuts and toasted breads conclude in a long lingering finish.

Semi-soft, surface-ripened, washed-rind cheese with a hazelnut and mushroom flavour.

The cheese produced by the Fromagerie du Pied-De-Vent is made from whole milk supplied by a single dairy herd of Canadienne cows fed from the land of the Magdalen Islands with no chemical additives. The hay produced by the diversity of fodder of the Magdalen Islands, fed to the cows, provides the character of the Pied-de-Vent.

Pizy is the name of a tiny Swiss village where Fabienne, the cheesemaker, was raised.

Pleine Lune Quebec

A soft ash coated bloomy rind.

Made from pasteurized milk and cream, this soft cheese has a bloomy rind covered in vegetable ash. It smells like fresh mushrooms and has a peppery finish to its taste. The cheese ripens slowly from the outside in to develop a perfect creamy texture. When young, the chalky interior has a neutral flavour, with only a hint of tartness. With time, the cheese develops a distinct aroma, and its black-and-white rind turns grey, giving the cheese flavours of butter and hot milk.

Pont L'Eveque Petite

Pont L'Eveque Petite

Created by Cistercian monks, it became the most famous cheese of the kingdom in the 15th century. Under its yellow washed rind, its blonde, soft texture. Styled without being strong on the palate, it has a subtle flavour and a slight taste of hazelnut and butter.
