1057 Extra Mature Scottish Cheddar

Named after the date when one of the last of the Celtic Kings – King MacBeth – lost his head upon a cold stone near the Peel of Lumphanan, 1057 is made from rich Scottish milk taken from dairy herds that graze on the banks of the lochs and in the glens of Scotland.

This mature cheddar is full flavoured, savoury, with some pleasant salty crystals throughout.

14 Arpents

14 Arpents is a semi soft farm cheese made from the whole milk of the brown swiss cows. This square-shaped cheese has a washed rind exterior which is tender but still typically sandy, and the interior is creamy and rich. Rich buttery milk flavours melt with earthy and vegetal notes of cooked cauliflower, mushrooms with a lingering finish of hazelnuts. The cheese is named after a road that borders the cheese dairy, le chemin 14 Arpents. Appenzeller Surchoix

Appenzeller Surchoix Switzerland

Appenzeller cheese is a hard cow's-milk cheese produced in the Appenzell region of northeast Switzerland. A herbal brine, sometimes incorporating wine or cider, is applied to the wheels of cheese while they cure, which flavours and preserves the cheese while promoting the formation of a rind.

Appenzeller has a documented history of at least 700 years. Today, about 75 dairies produce it, each with a different recipe for their brine wash. Most of the recipes are trade secrets.

Using a dry stir method, in which the curds are dried and then salted, the cheese is smoked for six hours.

Made with the milk from the cows of the PEI cooperative dairy farm.

Asiago

Asiago DOP

Asiago is a cow's milk cheese, produced only on the Asiago plateau in the Veneto foothills in Northern Italy. The cheese-making tradition in this area dates back to more than thousand years. Traditionally, it was made from sheep's milk but today it is produced from unpasteurized cow's milk. 

This "Mezzano” cheese is aged for four to six months and has a compact but yeilding texture and a fragrant, fruity taste that is fresh lactic and mild. Serve with Proscuitto, honey and almonds.

Orginally from the region Veneto, Northern Italy, this cheese made from cow’s milk is generally used as a table cheese in Italy. Asiago Fresco DOP is a young suple cheese that has been aged for less than 3 months. Appreciated by many due to its soft inner paste, large airy holes and sweet and light taste.

Avonlea - Clothbound Cheddar

The recipe for Avonlea Clothbound Cheddar has its roots from the Orkney Islands, which is north of Scotland. This Clothbound Cheddar is lovingly wrapped and turned with care as it ages over 14 months resulting in a rich, robust flavour. Made from the milk of cows from small local farms around P.E.I. this cheese is filled with the flavor of Prince Edward Island.

Beemster Vlaskaas

Historically, Vlaskaas was made only once a year to celebrate the Flax Harvest. In 2004 the Vlaskaas recipe was discovered and recreated by Beemster. Since then Vlaskaas has won golden medals around the world and is now made year-round.

Sweet and creamy. Pairs nicely with beers and white wines.
