Grilled Halloumi Chicken Skewers

Serves 4

4 boneless chicken breasts, cut in equal size pieces

50 ml olive oil

50 ml lemon juice

1/2 tsp black pepper

1 tsp dried parsley

3 tsp dried oregano

1 clove garlic, crushed

salt & pepper to taste

200-300g haloumi, cut into chunks similar in size to the chicken

Chop vegetables into large pieces:

1 red pepper

1 zucchini

8 mushrooms

1 red onion


For the tzatziki:

500g fat free plain yoghurt

1/2 large cucumber, de-seeded and finely chopped/grated

2 garlic cloves, crushed

1 tbsn lemon juice

salt & pepper to taste

Mix all the tzatziki ingredients.



Combine all the marinade ingredients and marinade the chicken for 20 minutes.

Skewer chicken, halloumi and vegetables.

Heat BBQ grill to medium. Grill skewers until chicken is golden and cooked through. Turn frequently.

Serve with tzatziki, warm flatbreads and cucumber ribbons.
