Feature Cheese - Sage Derby


The first production of Sage Derby dates back to the seventeenth century in Derbyshire, England which is still well known for its farming and lush green pastures. Sage Derby was initially only made for festive occasions such as harvest time and Christmas. Derby is a yellow cheese with a firm texture similar to cheddar. The addition of sage leaves to Derby curd was not done for looks, or even taste. During the 17th century, this ancient evergreen perennial herb was believed to have powerful therapeutic properties that could cure a variety of ailments. Sage Derby was a tasty, health-imbuing creation.
This semi hard cow's milk cheese has beautiful bright green markings throughout. Sage is not the only ingredient contributing to the green colour. Spinach juice is also added for colour, though the spinach flavours are extremely subtle, often completely undetectable. It has a subtle but distinctive fresh, herbaceous sage aroma and flavour with a robust, creamy after taste.

The unique green marbling of Sage Derby makes it an striking addition to any cheese board. Accompaniments to pair on your cheese board include turkey or classic salamis, dark breads like rye or pumpernickel, hearty seeded crackers, savoury fruit chutneys, nuts, and fresh or dried fruits and honey.

Traditionally Sage Derby is a favourite cheese found as part of a ploughman's lunch. It is a great breakfast cheese because it goes well with various fruit juices. Try melting it on fresh rye bread and top with an egg for a tasty breakfast. The pleasant flavour of sage is quite versatile and pairs with everything from fresh fruits and vegetables to poultry and pork dishes. The perfect topper for a turkey or chicken sandwich. Try crumbling this cheese over Gnocchi dressed in browned butter and fried sage leaves. Adds a deep earthy flavour shredded on top of tomato, pumpkin, carrot or squash soups.

Pair with dry floral white wines like Viognier or Chardonnay. For reds try Marsala, Shiraz, or Pinot Noir. Pairs well with Ales including brown, red and amber and pale.
