Feature Cheese - KALTBACH Le Chèvre


Emmi is the largest Swiss milk processor and one of the most innovative premium dairies in Europe. Dedicated cheesemakers and skilled craftsmen follow strict guidelines that are often centuries old. Emmi's Kaltbach cheeses are carefully crafted in the deep, cool Kaltbach Caves. Located in the Alpine Valley of Switzerland, these caves are a 22-million-year-old natural sandstone labyrinth with a small tranquil river running through. In fact, Kaltbach means “cold river” and it’s what allows for a constant humidity of 96 percent in the mineral-rich cave air. The natural climatic conditions in the caves regulates the humidity, which is a crucial part of the texture and flavour development and what makes this cheese unlike any other in the world.

This firm cave aged goat milk cheese has a smooth yet firm texture. While its fruity, creamy flavours unfold with a hint of walnut, it is lightly salty and rich in flavour, balanced by a caramel like sweet note.
Beautiful on a cheeseboard, serve with wildflower honey, nuts, chocolate, fruit spreads, cantaloupe, berries, grapes or apples. Cube or grate in salads, especially good in fruit salads, sandwiches and cubed for snacking.

Skewer with your favourite fruit for an easy appetizer or lunch snack.

Wine and Beer Pairings: Cabernet Sauvignon, Gewurztraminer, Riesling, Syrah, crisp blonde lager or a mild cream ale.
