Magie de Madawaska

Magie de Madawaska Quebec artisan cheese

This soft, washed-rind cheese is made with pasteurized whole milk that comes exclusively from Jersey cows from the Témiscouata region. Its orange rind is shiny, soft and sticky, sometimes displaying white moss spots. Like the rind, the ivory-coloured interior is sticky. It is chalkier at the centre and smoother towards the exterior. Its texture is supple even when the cheese is young, but as it ages, its chalky part fades and the interior becomes smooth and runny. When it is older, it becomes so runny that it might call for a spoon.

Pacific Rock

Pacific Rock is a hard, washed-rind cheese made from pasteurized cow's milk and aged for at least six months. It has a subtle, earthy flavour with hints of caramel complemented by rich, nutty buttery accents. The flavours are reminiscent of country-style bread intensified with orange zest.

The cheese gets its name from Canada's rugged Pacific Rim coastline. It has won many awards including bronze medal at World Cheese Awards 2013 and gold at International Cheese awards 2014.

Paillot de Chèvre

In olden times, cheesemakers used to insert a single piece of straw in the centre of the cheese in order to provide support while transporting it within the province. Based on the same tradition, Paillot de Chèvre is a ripened goat cheese shaped in a traditional log with plastic straws rolled along the length of the thin, bloomy, white exterior.

This popular Mexican-style cheese is snow white, very soft, moist and mild in flavour. It is slightly salty, with a mild tangy taste.
The fine crumbly texture softens when heated but does not melt making it ideal for crumbling over salads and enchiladas, and stirring into refried beans and other cooked dishes. Like other fresh cheeses (Queso Fresco actually translates as "fresh cheese"), it is lower in fat and sodium (despite its salty flavour) than aged cheeses. It is sold in various shapes and sizes, most commonly in rounds.
