Historically, Vlaskaas was made only once a year to celebrate the Flax Harvest. In 2004 the Vlaskaas recipe was discovered and recreated by Beemster. Since then Vlaskaas has won golden medals around the world and is now made year-round.

Brie de Meaux, named after the town of Meaux, is produced in the region of Brie, located 50 kilometers to the east of Paris. Records referencing Brie de Meaux date back to the 8th century, when the emperor Charlemagne is said to have tasted it. During the French Revolution, Louis XVI is said to have requested a final taste of Brie de Meaux before his arrest.

Literally meaning ''goat cheese with wine'' this semi-firm pasteurized goat cheese from Spain. The paste is sweet and smooth, perfectly balanced with the bright aromatic flavour of red wine with a gentle, pliable texture and mild fruity flavour. Pairs well with medium fruity reds.

Chateau de Bourgogne is made in the Burgundy region of France and is a not too distant cousin to Brillat Savarin. It is delicate, soft and creamy,yeilding a shot of butter and a dash of salt on the tongue before vanishing!

The richness of Chateau Bourgogne is set off and balanced wonderfully by champagne, but it will match well with a red burgundy (local matches are always good), other pinot noirs, or a blended red, like a Bordeaux or meritage.

A semi-firm cheese that originated in the Netherlands, and is named after the town of Edam in the province of North Holland. Edam is traditionally sold in spheres with a pale yellow interior and a coat of red paraffin wax. Edam ages and travels well, and does not spoil; it only hardens. These qualities (among others) made it the world's most popular cheese between the 14th and 18th centuries.

Edam is a mild, delicately flavoured cheese, with a smooth and creamy texture.

Emmentaler Switzerland Raw Milk

Emmentaler of Switzerland continues to be handcrafted the traditional way in small village dairies according to recipes handed down for more than 450 years. The milk used is delivered twice a day. It is produced with raw cow’s milk, adding only natural ingredients (water, salt, natural starter cultures and rennet). Preservatives or ingredients from genetically modified organisms are not allowed.
