This firm cheese with washed rind is the result of a joint effort by two Quebec cheesemakers, the Fromagerie du Prestbytère and the Fromagerie Nouvelle France. The impressive 40 kg wheels are made from a mixture of raw cow and sheep milk from the herds of each cheese maker. This cheese, made in very small quantities, and is offered only periodically.

After aging for 10 to 12 months, the Pionnier offers complex aromas of milky melted butter, caramel, almond and macadamia nut and a floral touch reminiscent of Beaufort d'Alpage.

Queso Iberico is a Spanish cheese made from a mixture of cow's, sheep's, and goat’s milk. The ratio of blend used in the making this hard cheese is constantly altered according to seasonal availability.

The distinctive piquant taste of this white cheese ranges from nutty to fruity. It has a rich, buttery texture that goes well when served as a snack cheese, a grating cheese or a grilling cheese. The aging time for this Manchego lookalike can vary from a couple of months to a year.

Saveur de Maquis France Sheep

This sheep's milk cheese is from the island of Corsica. It has a natural rind that is covered with rosemary, thyme, juniper berries, and other aromatic herbs found in the rocky, brambly Corsican landscape. These ground cover plants are known as "maquis."

Saveur du Maquis is creamy with a slightly nutty flavour, and the herbaceous quality of the sheep's milk is enhanced by the herbs on the rind.
