Made from sheep’s milk, Crotonese originates from Calabria, in the Province of Crotone, Italy. Crotonese has a natural yellow rind, with a semi-hard straw-yellow consistency that has a rich, distinct flavour, sharp with an earthy finish. Pecorino Crotonese is an artisanal sheep's milk cheese aged in wicker baskets which gives it a distinctive hatched pattern on the rind.

Etorki, meaning “origin” in Basque language, is a pasteurized sheep’s milk cheese made in French Basque region of the Pyrénées. The milk used to make this cheese is sourced from local black- or red-faced Manech ewes herded by local shepherds and dairy farmers. It takes six gallons of ewe’s milk to produce one wheel of Etorki.

The smooth, supple and velvety interior is a consistent white with occasional holes or slits. It has a sweet and earthy aroma suggestive of the caramel flavours released by the pressed and aged sheep’s milk.

Halloumi is a delicious cheese it is amazingly versatile and absolutely ideal for pan-frying. 

The cheese is white, with a distinctive layered texture, similar to mozzarella and has a salty flavour.

Made by hand in small batches with organic sheep milk. Made in Stratford, Ontario.

Halloumi can be fried until brown without melting, its firm texture when cooked causes it to squeak on the teeth when being chewed.

Herbed Pecorino Fresco

Soft and creamy with a hint of sheep's milk in its flavour, nutty and mild and just a bit tangy, good for slicing and melting. Enjoy it with a crusty bread.
This delicious cheese is enhanced by the addition of savoury herbs and Fleur de Sel hand rubbed on the exterior.

Highland Blue

Named for our beautiful Lanark Highlands and the many Scots who settled in this area. Highland Blue is a tangy and rich blue cheese with a natural rind and delicate overtones of blue mold combined with butter and mushroom. Fine blue-green veins with aromas are of damp slate, sage and marjoram. Full-flavoured, earthy and savoury with less salt and acidity than many blues.

Pair with late harvest Riesling or Vidal, Tawny Port, Oatmeal Stout or Ice-cider.

Kefalograviera

Kefalograviera

Kefalograviera is one of the newer Greek cheeses. Production was started in the 1960s and it has quickly become a favourite table cheese. The taste of this hard cheese is salty, somewhere between kefalotyri and graviera, hence the name. It is made from sheep’s milk and has a sweet and fruity taste. While prized as a table cheese (appetizer, meze), kefalograviera can also be used in saganaki (fried cheese), as a roasted cheese, or grated.
