Brebis Rousse D'Argental

This luscious washed rind cheese is produced by Fromagerie Guilloteau. The milk is collected from ewes of the Argental region of France. Aged for thirty days this square cheese exhibits a thin bright orange patchy rind. "Brebis" is French for sheep and "Rousse" refers to the colour of the cheese.

When young the flavour is rich and sweet, but as the cheese matures the stronger meaty, earthy flavours develop while the rind becomes a darker rusty orange colour. The texture is soft and velvety and sure to ooze deliciously on your cheese plate.

Blyth Farm Cheese is a small on-farm family business close to Lake Huron near the historical village of Blyth. They believe in the goodness of their cheese, made in small batches, handcrafted with passion, bringing out rich flavours. They do not use colouring or any other additives. Their cheese is made from 100% goat or sheep milk, fresh from the farm.

This is a washed rind sheep milk cheese that is hand made in Blyth, Ontario. Lovely firm texture studded with crystals with subtle flavours of lanolin and hay and a nice salty finish.

Kefalograviera

Kefalograviera

Kefalograviera is one of the newer Greek cheeses. Production was started in the 1960s and it has quickly become a favourite table cheese. The taste of this hard cheese is salty, somewhere between kefalotyri and graviera, hence the name. It is made from sheep’s milk and has a sweet and fruity taste. While prized as a table cheese (appetizer, meze), kefalograviera can also be used in saganaki (fried cheese), as a roasted cheese, or grated.

Aged 12 months, firm  yet suple texture.  Intense, zesty taste, rich deep pepperiness and sightly salty at the finish. It grates well and can also be eaten on its own.

Manchego cheese is the most important and well-known sheep’s milk cheese in Spain. It is made only from whole milk of the Manchega sheep raised in the "La Mancha" region. It can be recognized by a unique zigzag or cross hatch pattern on the rind which is created by the rippled surface of the molds used to make it.

This is a washed rind sheep milk cheese that is made for the Hope Artisan Dairy Co-op in Alymer Ontario by Gunn's Hill Artisan Cheese in Woodstock, Ontario.

The cheese is firm with a few crystals and a buttery sweet grass flavour.  It compliments well with fruit and light wines and beers.

An aged Manchego style sheep milk cheese from Spain. Generously veined with rich truffles. Salty and crystaline this rich cheese is full of earthy mushroomy truffle flavour.

Serve with honey and dry salamis.
Pair with big hearty red wines, but avoid anything too tannic, also dessert wines pair nicely.
