Chabichou du Poitou

The cheese comes in the shape of a truncated cylinder called "bonde", approximately 6 cm in height and 5 to 6 cm in diameter. Chabichou develops a characteristic, edible wrinkled rind dotted with occasional gray patches. Cut the cheese and it reveals a firm, creamy “bright white” interior but not before unwinding a thin buttery layer. Even though it smells typically “goaty”, the flavours are sweet with a bit of salty and tangy edge at the end.

Chevre Noir

Chevre Noir Goat Quebec

Chevre Noir is a Canadian made goat cheddar produced by Fromagerie Tournevent in Chesterville, Quebec. It was developed in 1988 by a Louise Lefebvre.  Full flavoured, firm, almost crumbly. It has a sharp taste with a bit of tang and a slightly crystaline texture.

Gjetost "Ski Queen"

Pronounced "Yay-toast." It's Norwegian, and although the name translates directly to "goat cheese," chances are that this cheese tastes just about as far from any you've had before. Gjetost is as sweet as caramel, with the texture of a dense, buttery fudge.

Gjetost is a variety of Scandinavian brown cheese (brunost), often refered to as Ski cheese or Ski Queen.
