Cashel Blue

Cashel Blue is a hand-made, semi-soft, blue cheese with a creamy texture and a buttery mild blue taste. Made from cows milk, over half of which is collected from the cheesemakers own farm, with the rest sourced from farms located nearby.

The cheese was named after the Rock of Cashel overlooking the pastures close to the farm. It has large blue flecks, made by the action of Penicillium roqueforti, the same agent used in Roquefort, Stilton and other blue cheeses.

The Celtic Blue is a soft creamy blue cheese, with delicate blue veining and a limestone coloured natural rind which is developed by specific ripening cultures. The typical blue taste is mild and not aggressive and is softened by a nice buttery aroma. Aged 2 - 3 months.

Challerhocker Raw Milk Switzerland

Washed in wine and spices and then aged for a minimum of 10 months, Challerhocker is the creation of former award winning Appenzeller maker Walter Rass.

A dense and creamy cheese with a characteristic swiss fruit and nuttiness, with deeper flavours of brown butter, melted leeks, butterscotch and sweet cream.

An excellent melting cheese, Challerhocker makes a decadent grilled cheese sandwich and is a flavourful addition to fondue.

Chateau de Bourgogne is a Burgundian cheese that is a not too distant cousin to Brillat Savarin. If there ever was a sophisticated party cheese this is it. It is so delicate, soft and creamy, it yields a shot of butter and a dash of salt on the tongue before vanishing! It is perfectly paired with Champagne and sparkling wines.

Chateau de Bourgogne is made in the Burgundy region of France and is a not too distant cousin to Brillat Savarin. It is delicate, soft and creamy,yeilding a shot of butter and a dash of salt on the tongue before vanishing!

The richness of Chateau Bourgogne is set off and balanced wonderfully by champagne, but it will match well with a red burgundy (local matches are always good), other pinot noirs, or a blended red, like a Bordeaux or meritage.
