A unique speciality from Kaamps, one of the few remaining Dutch farmstead creameries.

During preparation, the cheese curd is washed in Maple Syrup Whiskey; whiskey that contains maple syrup. Washing the cheese in this whiskey gives it a somewhat woody character with a sweet undertone.

Langres

Langres

Langres is a French cow’s milk cheese that originated from the plateau of Langres in the region of the Champagne Ardenne, France. Since 1919, the cheese has been granted protected AOC designation. Surrounded by a white penicillium candidum rind, the central paste is a bit soft and crumbly, and appears creamy in colour. It is milder than Epoisses, but slightly salty with strong smell. The firm pate melts in the mouth, leaving a complex taste. It looks great on the cheeseboard, and goes well with a salad, Red Wine from Burgundy, Marc de Bourgogne or Champagne.

Lankaaster Aged Loaf

The Lankaaster is made from the milk of local Brown Swiss cows. Shaped in a loaf and coated in a colorful waxy rind Lankaaster is a hard crumbly cheese with a slightly open texture. It is rich and dense, a little chewy, with butter and nutty flavours, caramel and a mild fruity pineapple tang.

The cheese is shaped as a loaf to express the fact that it is meant to be sliced and eaten directly on bread as the Dutch farmers do. It has a unique profile that is given by the specific starter culture used that makes it typical of cheeses made on Dutch farms earlier in the century.

Le Burgond

Morbier type, semi-soft cheese with a line of ash in the middle. Aromatic, and surprisingly mild, rich, creamy interior and a wonderful, nutty aftertaste.

Excellent served with Gewürztraminer, Pinot Noir or Bordeaux.

Le Maréchal

Le Marechal Raw Milk Switzerland

A raw cow milk cheese produced in the artisanal cheese making facility of the Rapin family in the Vaud region of Switzerland. The cheese is named after the cheesemaker's grandfather who was a blacksmith, or Le maréchal-ferrant. Every wheel of Le Maréchal cheese has a large picture of the grandfather on the label and stamped on each wheel is the name Le Maréchal and a unique identification number.
