Niagara Gold is a washed rind, firm cheese fashioned after recipes developed by the Trappist Monks of the Loire Valley.

This is a cheese with nutty, earthy overtones and mellow, buttery flavours.

This luscious cheese is delicately mild and sweet when young and gains pungency and piquant qualities with age.

The rind may be eaten or trimmed depending on your taste.

Nosey Goat Camelot

Camelot is a semi-firm washed rind goat cheese. Its rind is deliciously salty while the cheese is delicate, lactic and fresh tasting. Made in Ontario.

Origine de Charlevoix

Made with the milk of Canada's Vache Canadienne this cheese is simular to the french Reblochon. Soft in texture with a mixed rind and rich flavour.

Peribonka

The cheese is named after the small village of Péribonka, which is located in the Maria-Chapdelaine county in the northern Lac-Saint-Jean region.

This soft cheese with an orange-coloured mixed rind is made from whole pasteurized milk. Its interior is yellowish and creamy to runny at room temperature. Its saltiness, lactic and somewhat rustic taste offers delicious root vegetables aromas.

Raclette Fritz Pepper

Fritz Kaiser moved to Canada from his native Switzerland and established Fromagerie Fritz Kaiser in 1981. Leading the way in the creation of Canadian “Raclette”, this semi-soft, washed rind cheese with green peppercorns has a prominent hazelnut aroma which follows through with a sharp peppery and fruity flavour.

Winner 2015 Canadian Cheese Grand Prix Flavoured Cheese category.

Tête de Moine

Tête de Moine is a pressed, unpasteurized cow milk cheese from the Bernese Jura region of Switzerland. The name means "monk's head."

Tête de Moine is different from most cheeses in that instead of being sliced, it is scraped with a knife or another tool known as a girolle.

Wildwood

Wildwood has an impressive zesty flavour, but also a very rustic and appealing appearance. The aromatic rind gives the cheese a contrasting texture to the interior and typical aromas associated with washed rind cheeses. Wildwood is rich and creamy on the palate with a nice balance of salt. Wildwood is named after the Wildwood Dam in St. Marys.

Wildwood tastes excellent in sandwiches or just on a cheese platter with fruits, dried meat and bread. It can also be melted very well and used in grilled cheese sandwiches. This cheese is unique in its appearance and taste.
