Blue Fuoco

This rich blue cheese is produced with pasteurized milk from a farm in Pagazzano. Aged for a minimum of 50 days, this cheese has a creamy paste that is riddled with pepper flakes, giving it a spicy flavour. Very similar to a Gorgonzola with the addition of heat from the pepper flakes, this cheese pairs wonderfully with red wine and dried fruits such as figs.

Bouchées d'Amour Garlic and Parsley

Soft fresh bright tasting goat milk cheese marinated in grapeseed oil and garlic and parsley. You can add these “Bouchées d’Amour” to your salad or serve them on a slice of bread or crust, heated in an overhead broiler. You can also use them to garnish your pizzas and focaccias. The leftover oil would make an excellent, flavourful dressing.

Brebis Rousse D'Argental

This luscious washed rind cheese is produced by Fromagerie Guilloteau. The milk is collected from ewes of the Argental region of France. Aged for thirty days this square cheese exhibits a thin bright orange patchy rind. "Brebis" is French for sheep and "Rousse" refers to the colour of the cheese.

When young the flavour is rich and sweet, but as the cheese matures the stronger meaty, earthy flavours develop while the rind becomes a darker rusty orange colour. The texture is soft and velvety and sure to ooze deliciously on your cheese plate.

Brie

Delicate pure white bloomy rind surrounding a soft and creamy interior. It has a mild aroma of cream, butter and mushrooms.

This is a seasonally available, rich, full flavoured Brie has been split down the centre and filled with tangy cranberries.

Brie aux Truffles

This is a seasonally available, rich, full flavoured Brie de Meaux that has been split down the centre and filled with a mixture of crème fraiche and finely chopped white truffles. The flavour has a wonderful aroma of woodland mushrooms and violets.

Brie Bel Haven Triple Crème Brie

Triple cream Ontario made brie. Mild buttery and creamy.

Brie Belle Marie

Double cream Ontario made brie. Mild buttery and creamy.

200 gram rounds.

Brie Couronne

Imported from France, Brie Couronne is a decadent double cream. Creamy and rich without being cloying. Wonderful served with baguette, apples and walnuts.
