Pepper Chevre Cup

The pepper cheese is topped with whole red and green peppercorns, while its sides are coated with ground pepper. As you can see, it is certainly appropriately named. This spicy cheese makes an excellent addition to a cheese plate, and goes especially well with either smoked tuna or salmon on rye bread, perhaps with a splash of freshly squeezed lemon juice. All of these components but the lemon are available at the Saturday market on Saltspring Island, do you really need more reason than that to come and take a look?

Perles de Chevre

Soft fresh bright tasdting goat milk cheese marinated in canola oil and garlic and parsley. You can add these to your salad or serve them on a slice of bread or crust, heated in an overhead broiler. You can also use them to garnish your pizzas and focaccias. The leftover oil would make an excellent, flavourful dressing.

Queso Fresco

This popular Mexican-style cheese is snow white, very soft, moist and mild in flavour. It is slightly salty, with a mild tangy taste.
The fine crumbly texture softens when heated but does not melt making it ideal for crumbling over salads and enchiladas, and stirring into refried beans and other cooked dishes. Like other fresh cheeses (Queso Fresco actually translates as "fresh cheese"), it is lower in fat and sodium (despite its salty flavour) than aged cheeses. It is sold in various shapes and sizes, most commonly in rounds.
