Cotija Fresh White Cheese

Cotija is a Hispanic-style cheese named after the town of Cotija in the Mexican state of Michoacán. A mild salty fresh white cheese simular to feta.

Since Cotija cheese is salty, strongly flavoured, firm and does not actually melt, it is used for grating on salads, soups, casseroles, tacos, tostadas and chili. In Mexico, it is also widely used to enhance the flavour of many savory dishes by mixing directly into the casserole or recipe.

Panela

Queso Panela Mexico

Also called queso canasta (basket cheese), because it carries the impression of the basket in which it is molded. This fresh Mexican cheese is made from pasteurized cow’s milk. This pure white, smooth cheese is similar to Indian paneer.
Panela has a soft and creamy texture and a delicious fresh milk flavour. When heated it will soften but not melt or lose its shape. Also, the cheese absorbs flavours easily and at times is sold covered with garlic or pepper paste. It will turn a golden brown when seared as well as crumble easily on appetizers such as quesadillas.

Queso Fresco

This popular Mexican-style cheese is snow white, very soft, moist and mild in flavour. It is slightly salty, with a mild tangy taste.
The fine crumbly texture softens when heated but does not melt making it ideal for crumbling over salads and enchiladas, and stirring into refried beans and other cooked dishes. Like other fresh cheeses (Queso Fresco actually translates as "fresh cheese"), it is lower in fat and sodium (despite its salty flavour) than aged cheeses. It is sold in various shapes and sizes, most commonly in rounds.
