This red waxed gourmet cheese truckle is named after the Smith O’Brien home of Cahermoyle, Ardagh, where this medieval monastic cheese was revived about a hundred years ago. This is an adventurous red waxed cheese, veined with red wine, was revived from an old Limerick Palatine Recipe. It has a sharp taste with a strong presence of dry red wine. Enjoyed best on crackers or crisp-bread with a glass of vintage port.

Cashel Blue

Cashel Blue is a hand-made, semi-soft, blue cheese with a creamy texture and a buttery mild blue taste. Made from cows milk, over half of which is collected from the cheesemakers own farm, with the rest sourced from farms located nearby.

The cheese was named after the Rock of Cashel overlooking the pastures close to the farm. It has large blue flecks, made by the action of Penicillium roqueforti, the same agent used in Roquefort, Stilton and other blue cheeses.

Cahill's Irish Porter Cheddar is individually handcrafted Irish Cheddar blended with plain Irish porter, brewed by Guinness in their Dublin premises since 1759. This cheese is perfect as an hors D’Oeuvre when sliced and served with a tossed salad. It's beautiful marbled appearance makes a great centre piece on an after dinner cheese board.
